Panna cotta is often served with red fruit, but the combination of vanilla, chai spices, and apple seemed like a fun one to try. Delicious in combination with the silky-smooth texture that panna cotta can have. I wanted to make a vegan recipe and, lacking agar-agar, looked for an alternative solution. That's how I ended up with the combination of cornstarch and coconut milk. The promise was a texture that is softer than when you use agar-agar. Moreover, cornstarch is readily available at any supermarket. And indeed; the combination was found to be delicious and approved!
The recipe is super easy. The most important thing is to make sure you mix the cornstarch well with the other ingredients, so no lumps form. Other than that, it's an easy-peasy recipe. And of course, you can combine flavors yourself. Next time, I think I'll add cardamom to the mixture instead of vanilla!
