Waffles are wonderfully festive for breakfast or as part of brunch! Adding pumpkin to the batter not only sneaks in some hidden vegetables, but the pumpkin also makes the waffles deliciously sweet and soft in texture. And they get a beautiful golden color. By using a homemade Chai syrup as a sweetener instead of, for example, agave syrup or maple syrup, you immediately add a significant spice kick to the recipe! This essentially creates a Pumpkin Spice waffle. Be sure to save some of the syrup to drizzle over them later. A generous dollop of yogurt provides a fresh contrast. Instead of Greek yogurt, you could also opt for coconut yogurt, which makes it a bit sweeter.
