From challenge to product development
Setting up a new spice business is not without its challenges. One such challenge is that spices are harvested only once, sometimes twice a year, and we have to estimate how much of the harvest we want to purchase. We want to prevent the spices from gathering dust in the warehouse for a very long time (as often happens with large traders), so we always make room for the latest harvest. And sometimes that requires creative solutions.
The story of farmer Hakan
Hakan is the first farmer from his region to grow chili without using chemicals and pesticides. His farm is located in the Hatay region.
In 2023, the region was severely affected by an earthquake. After the earthquake, Hakan had to rebuild his business. Growing crops naturally is not the fastest way, yet he consciously chooses this path. And these are precisely the kind of projects we at The Good Spice love to support. So we enthusiastically purchased his chili.
A bit too enthusiastic, then. Because even though Hatay Chili has become a favorite spice for many, we still have too much in stock to place a new order. Fortunately, we've come up with something for that.
A spicy solution: chili oil (but we need your help).
Together with Nicole from Trouble & Spice (known for her award-winning chili oils), we have developed a true umami bomb. A chili oil with Hatay chili, cloves, star anise, and paprika powder. Dutch soybeans and crispy garlic from Spain add crunch. The deep umami flavor comes from the addition of moromi (a byproduct created during soy sauce production) and oyster mushroom stems. These are waste streams that are given a new purpose.
We'd really love to produce this, as it's addictively delicious. But for that, we need to know there's enough demand. That's why you can now pre-order the chili oil. As soon as we've sold a minimum of 350 units as pre-orders, we can start production!
Together with Trouble & Spice, we have developed an ingenious new product (if we do say so ourselves). And thanks to a successful pre-order campaign, we have now been able to produce it!
It has become a true umami bomb. Hatay Chili. Clove. Star Anise. Smoked Paprika Powder.
Trouble & Spice combined this with various no-waste ingredients that also add a lot of complexity, such as shiitake stems and moromi (what's left over during soy sauce production).
Because the Hatay Chili flakes are too fine to become truly crispy, Dutch soybeans and crispy garlic have been added to provide that crunch.

Once we can start production, it will take another 3-4 weeks before we can ship the chili oil. If you order other items, we will ship them at the same time as the chili oil. If you prefer to receive these earlier, we recommend placing a separate order for them.

An unopened jar can be stored for one year. Once opened, you can store chili oil for approximately 6 weeks in a dark place (but it probably won't last that long anyway ;-)).
