It's super easy to make your own vanilla sugar, and it's also much, much tastier than using those ready-made sachets of vanilla sugar. Vanilla sugar from the supermarket is sugar with an artificial flavoring added. No real vanilla is used in that. In fact, you pay quite a lot for a small sachet of sugar with flavoring.
If you buy good vanilla pods, you can easily make your own vanilla sugar from them. You'll get vanilla sugar with a real vanilla aroma, and you can confidently replace a portion of the sugar in baking recipes with this vanilla sugar for an intense vanilla aroma.
Making your own vanilla sugar is really very easy and a good way to ensure you get everything out of your vanilla pods. Put sugar in a jar and add the vanilla pods that you have left over after using the vanilla in a recipe. The pulp has already been scraped out, but the casings that remain still contain a lot of oils and thus aromas. By placing these casings in the sugar, these oils infuse into the sugar and release their delicious aroma. You can continue to replenish the sugar, both with sugar and with vanilla pods.
If you want the taste to be even more intense, you can also choose to mix vanilla pulp through the sugar, but this is actually not really necessary.
