There was a time when I owned a restaurant. We made everything ourselves, except the apple pie. That was baked by my business partner's mother. And for good reason, because it's the most delicious apple pie ever. You get the best result with different types of apples cut into very thin slices, giving you many thin layers. But the slightly lazier version (which I'm "guilty" of most of the time) is also delicious. In that case, the apples remain unpeeled and are not cut wafer-thin. And if I don't have almond flour at home, I easily replace the almond flour with extra flour. The result is always impressive!
